Die Struktur der Stärke ändert sich erheblich, und die kompakte und geordnete Struktur wird lose und ungeordnete Struktur. Die Gesamtmenge an Stärke, Inhalt, Struktur, Enthalpie und Gelatinisierungsgrad von Amylose und Amylopectin wird sich verändern, was in den folgenden beiden Aspekten zusammengefaßt werden kann.
